Arroz con Leche
Ingredients:
1 cup white rice (short grain is best)
2 cups water
2 cinnamon sticks
1 cup whole milk
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
Ground cinnamon for garnish
Instructions:
Cook the Rice: In a medium saucepan, combine the water and cinnamon sticks. Bring to a boil, then add the rice. Reduce the heat to low, cover, and simmer until the rice is tender and the water is absorbed, about 20 minutes.
Add the Milks: Remove the cinnamon sticks. Stir in the whole milk, evaporated milk, and sweetened condensed milk. Cook over medium heat, stirring frequently, until the mixture thickens, about 15-20 minutes.
Finish and Serve: Stir in the vanilla extract. Serve warm or chilled, garnished with ground cinnamon.
