1 cup rolled oats
2 cups coconut milk (or a mix of coconut milk and water)
1 ripe mango, peeled and diced
1/4 cup shredded coconut (toasted if desired)
1-2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
A pinch of salt
Optional toppings: fresh pineapple chunks, chia seeds, sliced almonds, or a drizzle of extra coconut milk
