This week I'm going to show you a recipe that I have adapted from various curry recipes I've tried. I like to keep it, quick, easy and tasty so all the ingredients for this recipe you probably already have in your pantry or can find them at your nearest grocery store.
What you'll need:
For Curry:
• 2 tbsp sesame oil
• 2 yellow (or purple) onion, chopped
• 2 bell peppers, chopped
• 4 garlic cloves, minced
• 2 tbsp olive oil
• 454 g extra firm plain tofu, chopped into 1-inch cubes
• 1 tbsp curry powder
• 1 tbsp turmeric powder
• ½ tsp black pepper
• ½ tsp paprika powder
• ½ tsp crushed red pepper
• 400 ml (14 fl. oz.) canned coconut milk
• ½ cup fresh cilantro, chopped
• ½ cup fresh green onion, chopped
