risotto reciHere's a basic recipe for a delicious mushroom risotto:
**Ingredients:**
- 1 1/2 cups Arborio rice
- 4 cups chicken or vegetable broth
- 1 cup sliced mushrooms (such as cremini or shiitake)
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
**Instructions:**
1. In a saucepan, bring the broth to a simmer. Keep it warm over low heat.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until they begin to soften, about 3-4 minutes.
3. Add the mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-6 minutes.
