Quinoa Salad Bowl π±
Ingredients:
1 cup quinoa, rinsed
2 cups water or vegetable broth
1 can (15 ounces) chickpeas, drained and rinsed
1 cucumber, diced
1 bell pepper, diced (any color)
1/2 red onion, finely chopped
1 cup cherry tomatoes, halved
1/4 cup fresh parsley or cilantro, chopped
Juice of 1 lemon
3 tablespoons extra virgin olive oil
Salt and pepper, to taste
Optional toppings: avocado slices, crumbled feta cheese (for non-vegan), toasted nuts or seeds, sliced olives
