Ingredients:
1 lb (450g) mushrooms, sliced (cremini, button, or a mix)
1 medium onion, finely chopped
2 cloves garlic, minced
2 tbsp olive oil or vegan butter
1/4 cup all-purpose flour (or gluten-free flour)
2 cups vegetable broth
1 cup unsweetened non-dairy milk (almond, oat, or soy)
1 tbsp Dijon mustard
1 tbsp soy sauce or tamari (for umami)
1 tsp smoked paprika
Salt and pepper to taste
1 tbsp fresh parsley, chopped (for garnish)
1 lb (450g) pasta, rice, or mashed potatoes (for serving)
Instructions:
Prepare the mushrooms: In a large skillet, heat the olive oil or vegan butter over medium heat. Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they soften and release their moisture. Remove the mushrooms from the skillet and set aside.
