Ingredients:
For the Gnocchi:
2 pounds (about 900g) russet potatoes (about 4 medium-sized potatoes)
1 large egg, lightly beaten
1 teaspoon salt
1 1/2 cups (about 180g) all-purpose flour, plus more for dusting
For the Pesto:
2 cups fresh basil leaves, packed
1/2 cup grated Parmesan cheese
1/2 cup extra virgin olive oil
1/4 cup pine nuts or walnuts
2 cloves garlic, minced
Salt and freshly ground black pepper to taste
