Eggplant Lasagna 🍆🧀
Ingredients:
2 large eggplants, sliced lengthwise into 1/4-inch thick slices
2 tablespoons olive oil
Salt and pepper, to taste
1 pound ground beef or ground turkey (optional, for meat version)
1 onion, finely chopped
3 cloves garlic, minced
1 can (14 ounces) crushed tomatoes
1 can (6 ounces) tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional, for heat)
1/2 cup grated Parmesan cheese (or vegan Parmesan)
2 cups shredded mozzarella cheese (or dairy-free mozzarella)
Fresh basil leaves, chopped (for garnish)
