Chili Oil Eggs 🌹
Ingredients:
4 large eggs
2 tbsp vegetable oil
2 tbsp chili oil (or more, depending on spice level preference)
2 cloves garlic, minced
1 tsp ginger, minced
1 tbsp soy sauce or tamari
1 tbsp rice vinegar
1/2 tsp sesame oil
1 tsp sugar (optional, to balance the heat)
1 green onion, sliced (for garnish)
1 tbsp sesame seeds (optional, for garnish)
Instructions:
Cook the eggs: Bring a small pot of water to a boil. Gently add the eggs and reduce the heat to a simmer. Cook for about 6-7 minutes for soft-boiled eggs with runny yolks or longer if you prefer harder yolks. Remove the eggs from the pot and transfer them to a bowl of ice water to stop the cooking process. Peel the eggs once they’re cool enough to handle.
Prepare the chili oil sauce: In a small saucepan, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant and slightly golden.
Add the chili oil: Stir in the chili oil and cook for another 1-2 minutes to infuse the flavors. Add the soy sauce, rice vinegar, sesame oil, and sugar (if using). Stir to combine, and cook for another 1-2 minutes. Taste the sauce and adjust the seasoning if needed (you can add more soy sauce for saltiness, vinegar for acidity, or sugar for sweetness).
