Beef Bourguignon Recipe
Ingredients:
2.5 lbs beef chuck, cut into 2-inch cubes
Salt and pepper to taste
2 tbsp olive oil
6 oz bacon, diced
1 large onion, chopped
2 carrots, sliced
3 cloves garlic, minced
2 tbsp all-purpose flour
3 cups red wine (Burgundy is traditional)
2 cups beef stock
1 tbsp tomato paste
1 bouquet garni (thyme, bay leaf, parsley, tied together)
8 oz mushrooms, quartered
20 small pearl onions, peeled
2 tbsp butter
Fresh parsley, chopped, for garnish
