Baked Oats
Ingredients:
2 cups rolled oats
1 1/2 cups non-dairy milk (almond, oat, or soy milk)
1/4 cup maple syrup or agave nectar
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
1/2 tsp baking powder
1 ripe banana, mashed (or 1/2 cup applesauce)
1/2 cup berries (blueberries, raspberries, or strawberries), fresh or frozen
1/4 cup chopped nuts (walnuts, almonds, or pecans) – optional
2 tbsp nut butter (peanut butter, almond butter, or cashew butter) – optional
Instructions:
Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish (about 8x8 inches or a similar size).
Prepare the oat mixture: In a large mixing bowl, combine the rolled oats, non-dairy milk, maple syrup (or agave), vanilla extract, cinnamon, salt, and baking powder. Stir well to combine.
Add mashed banana: Add the mashed banana (or applesauce) into the oat mixture, mixing until fully incorporated. This helps bind the oats together and adds natural sweetness.
