Hi, I'm Chef Rob Endelman and I'm going
0:05
to show you how to make a great one dish
0:06
meal, a turkey, bean, and vegetable
0:09
chili. It's really simple to make and
0:11
the best thing, it'll serve a lot of
0:13
people. The first thing we're going to
0:15
do to get our chili going is cook the
0:17
turkey. And we need a little olive oil
0:19
in the pan. I was heating the pan
0:21
before, so the oil is going to be hot in
0:23
a second. Then I'm going to add our
0:26
ground turkey. Okay, a little bit of
0:29
sizzle. We're going to let it sit,
0:30
spread it around, make sure it browns a
0:32
bit. I just want to mention a couple
0:34
points about the turkey. Make sure that
0:38
you get white meat from the breast. The
0:40
caramelization of the turkey will allow
0:43
it to take on a lot more flavor.
0:46
Now, our turkeyy's cooked to about 65
0:50
70% here, which is enough because
0:52
remember the turkeyy's going to cook as
0:54
well. So, I'm going to add my onion and
0:58
some yellow and orange pepper. You could
1:01
also use red if you have it. I just like
1:04
the color of the yellow and the orange
1:06
because we're going to use red later
1:08
from the whole peeled tomatoes again.
1:10
Now, what's happened here is
1:11
interesting. You heard sizzle before
1:12
with the turkey when the turkey was
1:14
alone. Now, you don't hear as much
1:16
sizzle. Why? Because the room
1:18
temperature onion and peppers that we
1:19
put into the hot pan lowered the
1:22
temperature of the pan. Okay? It's not
1:25
important, but if you feel like you
1:27
don't have enough heat, realize why the
1:30
temperature lowered and raise the heat.
1:33
After the onions and peppers soften a
1:35
bit, should take about 2 or 3 minutes.
1:36
What I like to do is add some ground
1:38
cumin, which has a great great flavor,
1:41
and it's your traditional, very, very
1:43
traditional flavoring
1:46
for chili. Put a little of the ground
1:49
cumin in. Mix around. If you feel like
1:51
you need a little bit more, add a little
1:54
bit more. But remember, the great thing
1:55
is you can always add more later. So,
1:58
we've got our ground turkey cooking. The
2:01
onions and the peppers are starting to
2:03
soften. And soon, the next step, what
2:06
we're going to do is add a can of whole
2:08
peeled tomatoes. I have whole peeled
2:10
tomatoes, but in the same vein, don't be
2:13
afraid to add diced tomatoes or even
2:15
crushed tomatoes. They all work fine.
2:18
So, we're going to take our can of whole
2:22
add it to the meat and the onions and
2:26
the peppers. And again, we're going
2:28
[music] to stir all the flavors
2:29
together. And being that I'm using the
2:31
whole peeled tomatoes, I want to break
2:33
apart those tomatoes with my wooden
2:35
spoon, which is going to release a lot
2:38
of the juices from the whole peeled
2:39
tomatoes. And again, as we've been
2:41
doing, we just stir everything together.
2:45
And if the onions and peppers weren't
2:47
100% cooked, guess what? They're going
2:50
to cook a little bit more here. Any
2:51
lumps of turkey that are still left,
2:54
break that up. And as this starts to
2:56
warm, we can go to our next step, which
2:59
is using beans, which is a great source
3:02
of protein, [music] which is which adds
3:04
even more protein to this dish that the
3:06
lean turkey has. What we're trying to do
3:08
here is give you protein without a lot
3:11
of fat. And the white meat turkey is
3:13
great for that. And our beans are
3:15
perfect also. I've got kidney beans
3:17
here, but just like the peppers, you
3:19
know what? You can use any type of bean
3:21
you want. You [music] can use black
3:23
bean. You can use pinto bean. Whatever
3:24
it is, we're using kidney.
3:27
Now, these beans are warm. So, what we
3:30
[music] can do is finish up with a
3:32
little more flavor. I like a little hot
3:34
sauce. And if you want, a little salt,
3:38
a little fresh ground pepper.
3:42
We'll give another stir. If you want for
3:45
color and more flavor,
3:48
a little [music] parsley. You know, so
3:50
much of eating, it's not just about how
3:53
it tastes, which is really important,
3:54
but trust me, even before you eat it, if
3:56
the dish looks pretty, it's going to
3:58
taste that much better. Not to mention
4:00
the smell from the cumin and the meat
4:02
and the onions and the peppers. This is
4:04
[music] just a great easy meal. Look how
4:06
much I made in what, 5 minutes. Great
4:10
one [music] dish meal. Ground turkey
