Freeze-drying removes the water weight from fruit and understanding how much it loses can help you determine the dryness of your freeze-dried fruit and help you forecast how much net product you'll receive after the freeze-drying process. In this video (updated from a previous video I posted), I share with you how much weight fruit loses. The fruits I use to freeze-dry in this video include strawberries, pineapple, raspberries, blueberries, and apples. The freeze dryer setting I use for all fruit, no matter if the machine is 125 degrees and I select the final-dry time to be at a minimum of 8 hours. The more final--dry time the better.
