0:00
hey welcome to another video on the
0:01
freeze dry business Channel where we're
0:02
connecting the freeze dry business
0:04
Community with the tools and resources
0:05
needed to grow a sustainable business
0:07
now today we're going to try the candy
0:10
lemon heads and I tried this before
0:12
didn't really work out that well so I'm
0:13
going to try it again if you have the
0:15
5.0 software on harvest right or higher
0:19
you can activate candy mode all it
0:21
really is is changing the total dry
0:23
temperature as well as the duration of
0:26
the drying time now with candy mode you
0:29
can upgrade the temperature all the way
0:31
up to 150 degrees you can also warm the
0:34
trays at 20 minutes max that's what I'm
0:37
going to do with these lemon heads
0:39
because as I've researched on different
0:41
Facebook forms and seen people who have
0:43
done it well and been successful with
0:45
the lemon heads most people have done it
0:47
on a cottage Food level where they've
0:49
been at home and they put the lemon
0:51
heads in the oven now you might be
0:53
asking yourself what the heck an oven
0:55
and the purpose behind putting in the
0:56
oven is that certain candies have that
0:58
hard shell on it peppermint Red Hots
1:01
lemon heads all of those types of
1:03
candies have a hard shell what you're
1:05
trying to do with these new hard shell
1:07
candies is you're trying to soften up
1:09
that shell so that you basically can
1:12
have the freeze dryer pop what's inside
1:13
and so that's what we're going to try to
1:15
accomplish now the oven obviously can be
1:18
changed to different temperatures above
1:19
150 degrees not with the freeze dryer
1:22
I've got this large Harvest Right freeze
1:24
dryer and you only have a Max of 150
1:26
degrees so what we're going to do today
1:28
is because my commercial kitchen doesn't
1:30
have an oven I'm going to test out the
1:33
highest temperature on the Harvest Right
1:35
freeze dryer to make sure that we can do
1:38
that just with the freeze dryer alone
1:40
instead of having to use an oven to warm
1:42
those hard candies if you have a cottage
1:43
food operation and you are running your
1:45
business from home you've got access to
1:47
an oven you can adjust those
1:48
temperatures above 150 degrees but for
1:50
somebody like me and other people who
1:52
have that commercial kitchen or if you
1:54
don't have one at home you don't have
1:56
access to an oven to warm it above 150
1:58
this video is going to all also be for
2:00
you to kind of test it out all right so
2:02
let's get the freeze dryer setting set
2:03
up now what I've read is that you need
2:06
to set it to the highest temperature
2:07
that it possibly is able to on the
2:10
freeze dryer so we're going to make sure
2:11
that the dry mode isn't fast and then we
2:14
need to set the temperature to as high
2:15
as it goes so the highest temperature
2:17
you can go with this version 5.1 or
2:19
higher on the software for Harvest Right
2:21
is 150 degrees now what we're going to
2:24
do as well is I'm going to add some
2:26
extra dry time I am going to keep it at
2:28
five hours which I normally do for fruit
2:30
so we're going to press save now we're
2:32
going to start this so one thing I don't
2:34
really understand about the Harvest
2:35
Right software when you have it with
2:38
candy mode is candy mode is activated
2:40
when you go above 130 degrees on the
2:43
temperature setting like we just did and
2:45
if it's in candy mode I don't really
2:47
understand why it says that we need to
2:50
cool the chamber and so you have to wait
2:53
that 15 minutes for the chamber to cool
2:56
and then you can basically start warming
2:59
the trays or start the candy mode and
3:01
start the drying process immediately so
3:03
that's kind of my only thing with the
3:04
software is I don't really understand
3:05
the cooling part but needless to say
3:07
we'll get this all warmed up for 15
3:09
minutes and then we'll Press Start and
3:10
get the lemon heads in there
3:12
all right so for the lemon heads what
3:15
I've got is I've got the mini lemon
3:16
heads in these boxes and I'm just gonna
3:20
see what happens for the smaller ones
3:22
but I've also got the big size lemon
3:25
heads and I did this before in a short
3:28
earlier this year and it didn't really
3:30
turn out that well so what we're going
3:32
to do is we're going to do one tray of
3:34
the large uh just a couple a few or
3:37
maybe a couple dozen and then we're
3:38
gonna do a couple of these boxes and
3:41
we're gonna see what what happens in the
3:48
all right next I'm going to do two of
3:50
the lemon head boxes and let's see what
3:53
the difference is in terms of whether
3:56
when you put two boxes on the tray
4:02
maybe actually looking at this right now
4:04
let's maybe do a third boxes I've got
4:10
so let's go ahead and put these lemon
4:15
and now let's go ahead and do I don't
4:18
know a couple of the of the limit has
4:19
that are much larger let's do
4:26
20 25. okay let's just do 25 of the
4:30
large Lemon heads and uh I'm really
4:34
excited to try the lemon heads because
4:36
I've seen a lot of posts on Facebook
4:39
pages and things like that and even on
4:41
Etsy that's becoming really popular to
4:44
and uh I think that it could be a great
4:47
addition to your lineup
4:50
now part of what you need to consider
4:53
when you're doing a freeze-dried
4:55
business is how many kind of SKU numbers
4:57
you're going to be adding to your
5:01
business now the SKU numbers I'm just
5:04
saying that in terms of like putting a
5:05
barcode on but what I just mean by that
5:07
is how many products are you going to be
5:09
willing to do if someone orders one bag
5:13
or how many are you gonna put if you're
5:15
gonna go to a show you know how many
5:18
different types of bags do you really
5:21
different types because that's a lot of
5:24
different places that you need to store
5:26
it's a lot of different runs of candy
5:29
that you have to do in the freeze dryer
5:31
some of it's going to be really popular
5:33
some of it's going to be had to store
5:35
for a while so you're going to have to
5:37
really kind of decide you know how many
5:40
actual products you need to do so now
5:43
for the purposes of this video I'm
5:45
really just doing this
5:47
just to show for the video I want to
5:50
test these out because I've done it
5:51
before and it just didn't really work so
5:53
and you know what Just for kicks let's
5:55
do some Skittles at what we're going to
5:57
do for the settings for these lemon
5:59
heads so let's go ahead and do Skittles
6:04
and what we're going to do with the
6:06
Skittles is I'm curious to see what
6:08
warming the temperature up to 150
6:11
degrees as well as running the 150
6:14
degree temp in the freeze dryer at 150
6:16
degrees for five hours how different is
6:19
going to change the texture of these
6:21
freeze-dried Skittles so I'm excited to
6:23
kind of see that so we'll put this at
6:26
the top of the trays in a large freeze
6:29
dryer hey a quick plug for the rest of
6:31
my videos if you haven't done it already
6:32
or you're not a subscriber go to my
6:35
channel and view a couple of my other
6:36
videos I've got a lot of great
6:38
information about freeze drying fruit to
6:40
ice cream ice cream sandwiches and other
6:42
types of candies I've also recently done
6:44
a Roi video with some calculations what
6:48
the ROI is for Taffy and candy for a
6:52
freeze dryer and why freeze drying as a
6:54
business is so popular right now so
6:56
check that out also hit the like button
6:57
or comment below I'd love to hear from
6:59
you all right the freeze dryer settings
7:01
are set again what we set it to was 150
7:04
degrees for warming for 20 minutes and
7:07
then we're going to run the freeze dryer
7:09
for five hours at 150 degrees and we're
7:13
going to see what happens to the lemon
7:14
heads both the small and the large size
7:17
now again on these trays that we did on
7:20
the freeze dryer we had
7:22
one box of these small lemon heads the
7:26
second tray was three boxes of the small
7:28
lemon heads and then we put on about 35
7:30
large Lemon heads and then we for fun we
7:33
just did the Skittles on the last tray
7:34
up there and we're gonna see what
7:37
happens to those Skittles at 150 degrees
7:39
so I'm excited to find out we'll see you
7:42
on the flip side once we get this freeze
7:43
dryer cycle done see ya all right the
7:45
cycle is done we ran the machine for
7:47
five hours and we had the temperature
7:49
set at 150 degrees while also warming
7:53
the trays at 150 degrees for that 20
7:56
minute period so let's go ahead and
7:57
check out the freeze dryer let's see
7:59
what happens hey a common question that
8:00
I get asked about freeze drying candy is
8:03
sometimes you might notice so when you
8:04
release the drain valve you'll notice
8:06
that the candy sometimes deflates not
8:09
everything but sometimes it does and I
8:11
learned the hard way about that and
8:13
sometimes I'd have to rerun the candy
8:15
well don't do that anymore because I've
8:17
got a special tip for you let the candy
8:19
settle let it go down to about 100
8:21
degrees or less I know that's a little
8:23
bit more wait time in changing out the
8:26
different candy Cycles but believe me
8:28
you won't have that type of error in
8:30
letting those candies deflate and so
8:32
that's my tip for you all right here's
8:34
the Skittles wow they puffed up a ton
8:36
take a look at that at 150 degrees for
8:39
five hours wow they completely puffed I
8:42
don't even think that these would be
8:44
really worth even packaging just because
8:47
they might be so fragile well the good
8:48
part about being a freeze-dried business
8:50
owner and freeze-drying candy is you get
8:52
to do the taste testing to see if it's
8:53
dry also just if it's good so let's go
8:56
ahead and give you the give the taste
8:58
test with the Skittles at 150 degrees
9:01
let's do two of these I've got this
9:03
yellow one super puffed up what's up
9:06
wow at that 150 degree tent these
9:08
Skittles are a lot more Airy and a lot
9:10
more crunchy that sugary stuff right
9:12
there that dissolves more quickly than
9:15
the tint that I usually do Skittles at
9:17
which is at 140 degrees so definitely
9:19
clumped up a lot more I don't really
9:21
like that because as you can see it's
9:23
super clumped up it's going to be hard
9:24
to get it in individual bite-sized
9:26
pieces so wouldn't recommend the 150
9:28
degrees let's take a look at the lemon
9:29
heads all right here are the lemon heads
9:32
let's go ahead and take these out
9:34
and put them on the counter all right as
9:37
you can see with these lemon hens for
9:39
one box of the tinies some of them
9:42
popped some of them did not so I'm going
9:45
to kind of say probably that you
9:46
probably have to warm them up at a
9:48
warmer temperature or maybe I should
9:50
warm them up even longer which we can't
9:53
really in the Harvest Right I do know
9:54
that this is kind of what it's supposed
9:56
to look like it's supposed to pop open
9:58
the shell from that yellow and then it's
10:00
supposed to be crunchy let's do a quick
10:08
a little bit still crunchy on the shell
10:13
that's sour still I'm gonna try one more
10:16
this one seems like it's popped up a
10:19
little bit more yeah
10:22
definitely crunchy oh this is why I
10:26
don't really prefer lemon heads I'm just
10:28
not a sour person so well that was the
10:30
first tray let's go ahead and take in
10:32
another one and this tray actually
10:33
popped a lot of the tiny lemon heads I
10:36
really like what I'm seeing here this is
10:38
three boxes and again this one was on
10:42
the second shelf of the large freeze
10:45
um what I've have said in the past in
10:47
other videos is I've noticed that when
10:49
you do the Jolly Ranchers the bottom
10:51
tray and the top tray tend to not pop as
10:54
much and I think that's the case with
10:57
these lemon heads as well so
10:59
this second shelf definitely looks like
11:01
it got better in that aspect all right
11:03
let's go ahead and take a look at the
11:05
large Lemon heads and let's put them out
11:07
here so we can see them better
11:10
all right so these were the larger lemon
11:12
heads and as you can see some of these
11:15
actually puffed up quite a bit I really
11:16
like this one I definitely think that
11:18
this is crunchy let's choose that one to
11:20
taste test and then as you can see like
11:23
this one didn't really pop as much and
11:26
so I'm kind of curious whether these did
11:28
what they were supposed to so let's do a
11:30
taste test all right let's go ahead and
11:31
give the large Lemon head a taste test
11:36
wow still has some lemon cake not as
11:38
much as those tiny lemon heads but it
11:41
definitely is much more Airy a lot more
11:44
crunchy and I think this is what you're
11:46
aiming for all right so we did some
11:47
taste tests we kind of looked to see
11:49
what they looked like visually in terms
11:51
of those lemon heads now I've seen
11:53
different pictures and I definitely have
11:55
seen that some of these have popped the
11:57
way other people have gotten them to
11:58
work that second tray that we had with
12:01
three different boxes of the tiny lemon
12:02
heads I'm looking at it right down here
12:04
and all of them pretty much popped I
12:07
think I could probably sell that back
12:08
the large Lemon heads also pretty much
12:11
all popped I think what you're looking
12:13
for to sell lemon heads is you're really
12:16
just kind of selling a different type of
12:18
texture just something new for people to
12:20
try well obviously you can't taste test
12:22
every single one before you sell it so I
12:25
think this is going to be more of a
12:26
visual check for anyone trying to do
12:28
lemon heads alright so the living heads
12:30
work I'm gonna give them two thumbs up I
12:32
do think that warming the trays at 150
12:34
degrees for that 20 minute period which
12:35
was the max we could do under this
12:37
software and also freeze drying it at
12:40
about 5 five hours did accomplish what
12:42
we were looking for based on what I've
12:44
seen other people do with lemon heads so
12:46
I definitely would bag this and sell it
12:49
and if I had different kind of
12:51
experiences from different customers
12:52
taste testing and they're like this
12:54
doesn't actually have a crunch it's
12:56
still hard maybe I need to dry longer
12:58
but overall I would say the Lemonheads
13:00
is a success going at 150 degrees on the
13:03
temp and 150 degrees at warming the
13:05
trays for 20 minutes hey one thing to
13:07
note about the lemon hands what I did
13:09
with my machine in my commercial kitchen
13:11
is I didn't want to use the oven which I
13:14
know a lot of people do to do the
13:16
Lemonheads and other hard candies
13:18
because you're just trying to get the
13:19
outer shell to soften up enough to where
13:21
you when you run the freeze dry at that
13:23
high temp and the vacuum it pops now
13:26
because I'm in a commercial kitchen I
13:28
wanted to see what the machine could do
13:30
because sometimes your commercial
13:31
kitchen doesn't have an oven like mine
13:33
I'm rinsing this commercial kitchen and
13:35
I don't have an oven so I wanted to see
13:37
whether the machine could do it at 150
13:39
degrees as well as warming the trays up
13:43
for that 20 minute period at the highest
13:44
temp possible so I would sell these
13:46
lemon heads I definitely think it
13:48
accomplished what I was looking for and
13:50
so you if you don't have an oven I
13:52
definitely think you could put it into
13:53
the freeze dryer well thanks for
13:55
watching how to freeze dry lemon heads I
13:57
hope this was helpful and just gave you
13:58
