Here is a delicious Buckeye recipe, a classic treat that combines creamy peanut butter with a chocolate coating. In a bowl, mix 1 cup of peanut butter with 1/2 cup of softened butter until smooth. Gradually add 2 cups of powdered sugar, mixing until a dough forms. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper. Chill in the refrigerator for at least 30 minutes. Meanwhile, melt 1 1/2 cups of semisweet chocolate chips with 2 tablespoons of vegetable oil over a double boiler or in the microwave, stirring until smooth. Dip each chilled peanut butter ball into the melted chocolate, leaving a small portion of the peanut butter visible at the top. Return to the baking sheet and refrigerate until the chocolate is set.
