Ingredients
1 ½ cups dried chickpeas (or 1 can, drained and rinsed)
1 teaspoon baking soda (for cooking dried chickpeas)
⅓ cup tahini (sesame paste)
3 tablespoons fresh lemon juice
2 cloves garlic, minced
½ teaspoon ground cumin
3 tablespoons extra virgin olive oil
½ teaspoon salt (adjust to taste)
¼ cup cold water (as needed for texture)
½ teaspoon smoked paprika (optional, for garnish)
Fresh parsley and extra olive oil for garnish
Instructions (Two Cooking Methods)
Method 1: Stovetop Cooking
Soak the dried chickpeas overnight in water.
Drain, then add them to a pot with fresh water and baking soda. Bring to a boil, then simmer for 1.5 to 2 hours until tender. Drain and let cool.
