Light roast coffee has been the cool kid for a while now.
Bright. Fruity. Complex. “Origin-forward.”
But after two weeks of brewing five different light roasted coffees across pour-over, immersion, and espresso… I kept asking myself the same question:
Why does this taste like tea?
In this video, I walk through my full experiment — pushing extraction past 24%, changing ratios, testing different grinders, brewing at multiple temperatures, and chasing one thing I couldn’t quite find: Sweetness.
What I discovered surprised me.
Light roast isn’t about sweetness the way I define it. It’s about layers of acidity. It’s about complexity. It’s about intensity without bitterness.
And while I still prefer medium and darker roasted coffees, this journey gave me something more valuable than a new favorite roast — it gave me clarity about what I actually love in a cup.
This isn’t a takedown of light roast.
It’s an honest exploration from someone who usually doesn’t reach for it.
