There's a Colombian Java sitting on my shelf that I've been a little selfish about — and Episode 207 is me finally explaining why. This isn't a geisha with wild complexity. It's not a Brazilian loaded with sweetness. It's a medium roast Colombian that bends, transforms as it cools, and no matter what I do to it — different grind, different temperature, cone dripper, flat bottom — it just keeps showing up. Raspberry undertones, chocolate notes, a soft Meyer lemon acidity that's approachable and just enough sweetness to keep the whole thing alive.
