Stop Matching Water to Roast Level - Try This Instead
Dec 21, 2025
It Smells Better Than It Taste — a quiet coffee newsletter where I share what I'm learning about coffee, curiosity, and daily rituals, this channel is an extension of that space: https://www.itsmellsbetterthanittaste.com/
Everyday Beans is about finding joy in coffee: one cup at a time. I’m an engineer turned roaster, a self-proclaimed mad scientist behind the brewer, and someone endlessly curious about coffee: and life. I share my wins, misses, and discoveries so you can explore your own journey through coffee.
Ever wondered if you HAVE to match water profiles to roast levels? I tested all four Third Wave Water packages on the same light-roasted coffee, and the results completely changed how I think about brewing water. The "low acidic" profile made my light roast sweeter and fruitier than the "light roast" package—proving you should craft coffee for YOUR palate, not follow rigid rules.
In this experiment, I brewed the same coffee four times with identical ratios (1:16), testing Third Wave Water's light roast, medium roast, dark roast, and low acidic mineral profiles. Each package created distinctly different cups—from sharp lemony acidity to soft, juicy red fruit sweetness. The key insight? You have more tools in your toolbox than you think. Don't be pigeonholed into matching water to roast level—mix, match, and find what YOU love.
Key Discoveries:
Low acidic water brought out unexpected sweetness in light roast coffee
Each water profile creates noticeably different flavor characteristics
Water chemistry gives you another variable to shape your perfect cup
Breaking the "match water to roast" rule can improve your coffee
TDS measurements stayed consistent (1.40-1.45) across all profiles
Personal palate preferences matter more than prescribed pairings
This isn't about finding the "right" answer—it's about exploring the subtleties that make coffee exciting. Whether you want bright acidity or rounded sweetness, you can now craft that experience through water profile selection. Give these experiments a try and discover what balance speaks to YOUR taste buds.
What's your experience with brewing water? Have you tried Third Wave Water or experimented with different mineral profiles? Drop your thoughts in the comments—I'd love to hear what you discover when you stop following the rules and start trusting your palate.
