I brewed two nine-month-old coffees side by side — one bag pre-ground, one whole bean — to find out whether grinding fresh actually rescues old coffee. Short answer: barely. Both cups came out flat, and the thing that made them drinkable again was not the grinder, it was the ratio.
What this tasting turned up:
Pre-ground and whole bean tasted far closer than I expected after nine months
Old coffee reads about two ratio steps weaker than it should — a 1:15 drinks like a 1:18 or 1:20
Making it stronger (1:10, even 1:8) brings the body back without making it harsh
The flavors do not last — you get an initial taste, then it dies quickly
One-way valve bags held up better than I assumed, with no vacuum sealing
