**Ingredients:**
- 2 pounds beef shank, with bone (cut into 2-inch pieces)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 ears of corn, cut into thirds
- 3 carrots, peeled and cut into large chunks
- 2 potatoes, peeled and cut into large chunks
- 1 chayote squash, peeled and cut into large chunks (optional)
- 2 zucchini, cut into large chunks
- 1/2 head of cabbage, cut into wedges
- 2-3 tablespoons chopped fresh cilantro
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon ground black pepper
- 8 cups water
- Lime wedges (for serving)
- Cooked rice (for serving)
- Warm corn tortillas (for serving)
