- 2 tablespoons of olive oil
- 1 chopped onion
- 2 chopped carrots
- 2 chopped celery stalks
- 2 minced garlic cloves
- 8 cups of turkey broth (or chicken broth)
- 2 cups of cooked, shredded turkey
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 1 cup of pasta or rice (optional)
- Fresh parsley, chopped for garnish
2. **Instructions:**
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in the garlic and cook for another minute.
- Pour in the turkey broth and bring to a boil.
- Add the shredded turkey, thyme, and rosemary. Season with salt and pepper.
