My friends at Bil Weekend had planned an awesome morning for me. We’d be having a traditional dish called bagila bil dihin, which is made from boiled fava beans, bread soaked in the liquid, and topped with eggs. We’d also have kabab tawa! SUBSCRIBE TO MY NEWSLETTER: https://bit.ly/3JR71yN MY LINKTREE: https://linktr.ee/davidsbeenhere We went into the kitchen to see how they’re made and then we sat at our table with the bagila bil dihin, bone broth stew, shorbeh (lentil soup), kabab tawa, makhlama, and amba. The bagila bil dihin was to die for. I loved the texture and flavor of the bread, which had been soaked in the fava beans as they boiled. Adding my David’s Been Here hot sauce added a nice burst of tropical flavor. Meanwhile, the kabab tawa was like a nice meat fritter. I made a little sandwich out of them with some bread, basil, and tomatoes. It was so crispy and refreshing! The minced lamb, tomatoes, and eggs in the makhlama were tasty, juicy, and fatty. And the amba added a nice sour flavor that I loved. Then, we tried some cucumber and radish pickles and a smoked yogurt drink called kashk! It was smoky, sour, and delicious! There were also some delicious, tender chicken wings. The owner broke it up for me with the bread and fed me some. It was so delicious and he was so nice! Outside, we saw some chickens stuffed with tomatoes and onions roasting on a rotisserie. Then, we finished with some Iraqi chai before heading outside to some fish vendors who were gutting some fish.
