Hey guys, this is a special video I made to celebrate reaching 1000 followers on Instagram! President's Choice Concerto cookies are my all-time favourite cookies, and as a personal challenge I wanted to try to bake them myself! I must say this definitely was a challenge, I found the cookie part to be simple to bake but it was getting the square chocolate topping that was the difficult part! I hope this recipe is helpful to you guys, though I certainly have room for improvement and will definitely be making this again to keep practicing :)
For all measurements, the written recipe can be found on the blog here:

0:00
hi guys today is the day that I will be
0:03
making my favourite cookies this the
0:06
concerto with the butter biscuit down
0:09
here and dust chalk it up there and it's
0:12
my favorite and this is on the occasion
0:14
of me getting a thousand followers on
0:17
instagram so let's get started on these
0:19
cookies right now so for this recipe
0:23
since the main goal is to make that the
0:27
concept of the butter biscuit with the
0:29
chocolate so I've gone ahead and already
0:32
made my dough for the butter biscuit
0:35
it's really simple just combine some
0:38
butter sugar and flour some with
0:40
molasses and then you just mix that up
0:44
I use my KitchenAid mixer for that it
0:46
was really simple like 5-10 minutes and
0:48
then you just refrigerate it and over
0:51
here I have a small piece of that which
0:55
I've as you can see
0:56
squared off I'm gonna making square
0:59
cookies let's use a knife a sharp knife
1:01
and made it the shape like how I needed
1:04
it to be we refrigerate it you want to
1:05
refrigerate for at least two or three
1:08
hours and preferably overnight since I
1:11
have my cookie dough right here let's go
1:13
and start cutting our cookies into shape
1:15
we want them so you want the width to be
1:18
about both to an eighth of an inch so
1:21
I'm going to start cutting with a sharp
1:22
knife like that straight cut so here the
1:32
cookies which I've cut and I'm making a
1:35
small batch right now cause I'm still in
1:38
the testing phase and I'm so excited to
1:41
try this new batch now I have my oven
1:45
set up at 350 and before you put this in
1:49
the oven you're going to brush this with
1:50
some egg wash and to make the egg wash
1:53
I took one egg and I put about a half a
1:56
teaspoon of water and whisk it up so now
1:59
I'm going to brush these with my egg
2:00
wash
2:07
appliances egg wash will help give a
2:10
cookies a nice brown color but of course
2:15
if you do not eat eggs this step is
2:18
completely optional
2:26
so now for the most exciting part I have
2:30
over here three ounces of unsweetened
2:33
chocolate and six tablespoons of sugar
2:37
I'm using an artificial sweetener I'm
2:40
using Splenda and you can use this if
2:43
you want or sugar regular sugar if you
2:45
would prefer so now you're going to make
2:46
a double boiler so on the bar at the
2:49
bottom have some water which I'm heating
2:52
up to a boil and I have a pot sitting on
2:56
top of the water this is going to help
2:59
us avoid burning the chocolate as you're
3:01
melting it so we want to wait until it
3:03
comes up to a boil and then we're going
3:05
to lower the heat until the water is
3:07
simmering and it's still hot so my water
3:10
is coming up to a boil now I'm gonna
3:12
lower the COK down to medium-low keep
3:17
the water simmering and now I'm going to
3:19
add in my chocolate so now as you can
3:24
see a chocolate is trying to melt now
3:28
soon I'm going to start stirring and in
3:31
small increments and start adding in my
3:34
sugar so now as you can see a chocolate
3:37
is completely melted I'm going to start
3:40
adding my sugar in and small increments
3:43
and whisk until it's completely
3:45
dissolved and melted if you don't want
3:50
the chocolate to be gritty because of
3:52
the sugar you want the sugar to melt
3:54
completely and help create a really nice
3:58
texture so here you have it guys here
4:02
the cookie that's been about 13 to 14
4:06
minutes you want to keep an eye on them
4:08
like this one became a little bit
4:10
browner than I would like it but it's
4:13
still not burnt that's amazing but here
4:16
that's perfect
4:18
as you can see there's an amazing bottom
4:21
so once the cookies are out you want to
4:24
put these on a rack to help cool down
4:26
and putting them on the rack is really
4:29
gonna help pushing that process up and
4:32
now a chocolate is almost ready I've
4:36
added about 3 tablespoons of my
4:38
sweetener right now and I think that's
4:40
enough and six tablespoons I mean too
4:42
much but if you want it sweeter then go
4:44
ahead a Matic I want to be sort of like
4:47
a 70% dark chocolate so I'm happy with
4:50
that and keep tasting you get a taste to
4:54
know what you are putting on your food
4:56
now I'm going to add about a tablespoon
4:58
of butter just have smoothing out this
5:01
mixture a bit and hot chocolate is ready
5:04
and then we will form it into molds
5:07
using a cookie cutter and place it on
5:10
our cookie so now I'm going to put in my
5:14
melted chocolate it to make cookie
5:16
cutter mold and this is the best way
5:20
that I figured out with without having a
5:24
natural mold to the chocolate of doing
5:26
this if you guys think of a better way
5:28
please leave a comment down below and
5:30
let me know and how I can improve this
5:32
step so here after busting paper in the
5:36
consider I'm going to add just a little
5:38
bit in there
5:46
I'm going to make sure it's completely
5:50
on every corner stucking it a little bit
5:54
and now I'm going to lift this mold move
5:58
on to the next one
6:04
so here are my top lip squares not
6:08
perfect but I'll be getting better soon
6:11
I'll be striving to improve and now we
6:15
don't let this cool down we learn the
6:17
cookies cool down and the chocolate and
6:19
I've reserved some of my molten
6:21
chocolate mixture that I'll be using
6:23
that to put it on the cookie and help
6:26
you the chocolate squares when they've
6:29
cools down if it's taking too long for
6:32
your chocolate to come to a solid space
6:35
you can always put it in the freezer and
6:37
help freeze chocolate
6:39
I just solid but as you can see now my
6:41
chocolates have become solid and I can
6:45
easily take these out and handle them
6:47
I'm going to use some more of my melted
6:51
chocolate with au which are melted using
6:54
a double boiler and add a little bit of
6:57
it onto each cookie it's going to have
7:00
glue a chocolate squares onto our cookie
7:04
so now I'm just going to use the back of
7:06
a knife to gently transfer these squares
7:10
onto my cookie gonna press on it make
7:17
sure it's good so my cookies are all
7:19
ready now and now you want to let this
7:21
come back down to room temperature and
7:24
show that our chocolate is stuck
7:26
completely onto our biscuit hey guys
7:29
forgave you have it my homemade Concetta
7:33
cookies
7:34
butter cookies the dark chocolate top
7:35
and I can't wait to try these and I feel
7:41
like this challenge was a challenge
7:44
because like there was like no waste
7:47
real help on how to I can I can stand
7:50
all this together and about this great
7:53
recipe for the butter biscuits which I
7:55
really love and our Polly's continued
7:58
use that in the future to bake
