- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 2 cups vegetable or chicken broth
- 1/2 cup frozen peas (optional)
- 1/4 cup toasted pine nuts (optional)
**Instructions:**
1. **Cook the Orzo:**
- In a medium saucepan, bring the vegetable or chicken broth to a boil.
- Add the orzo pasta and cook according to the package instructions until al dente, about 8-10 minutes.
- Drain any excess liquid and set aside.
