500g carrots, peeled and sliced
- 2 tablespoons butter
- 2 tablespoons honey
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

1. **Blanch the carrots**: Bring a pot of salted water to a boil. Add the sliced carrots and cook for about 5 minutes until tender-crisp. Drain and set aside.
2. **Prepare the glaze**: In a large skillet, melt the butter over medium heat. Stir in the honey and brown sugar until melted and combined.
3. **Glaze the carrots**: Add the carrots to the skillet and stir to coat them in the honey-butter mixture. Cook for another 5-7 minutes, stirring occasionally, until the carrots are fully coated and caramelized.
