### Coconut Shrimp
**Ingredients:**
- 1 pound large shrimp, peeled and deveined, tails on
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
**Instructions:**
1. **Set up your stations:** In three separate bowls, place the flour mixed with salt and pepper, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs.
2. **Coat the shrimp:** Dip each shrimp first into the flour, shaking off any excess, then into the eggs, and finally coat with the coconut-panko mixture, pressing gently to adhere.
3. **Heat the oil:** In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot.
4. **Fry the shrimp:** Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Avoid overcrowding the skillet. Remove with a slotted spoon and drain on paper towels.
5. **Serve:** Serve hot with your favorite dipping sauce, like sweet chili sauce or a homemade pineapple dip.
