Slow Cooker Pork Carnitas Recipe
Ingredients: 2 lbs pork shoulder, 1 onion (chopped), 4 garlic cloves (minced), 1 tbsp chili powder, 1 tsp cumin, 1 tsp oregano, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 cup orange juice, 1/4 cup lime juice, 1 cup chicken broth, 2 tbsp olive oil. Instructions: pat pork dry and rub with chili powder, cumin, oregano, salt, and pepper. heat olive oil in a skillet over medium-high heat and sear pork on all sides until browned, about 5-7 minutes. transfer pork to slow cooker. in the same skillet, sauté onion and garlic until softened, about 3 minutes, then add to slow cooker. pour orange juice, lime juice, and chicken broth over pork. cover and cook on low for 8 hours or high for 4 hours until pork is tender and shreds easily with a fork. remove pork from slow cooker and shred with two forks. optional: for crispy carnitas, spread shredded pork on a baking sheet and broil in oven for 3-5 minutes until edges are crisp. serve with warm tortillas, cilantro, diced onion, and lime wedges.
