Ingredients: 2 pounds beef short ribs, 1/2 cup soy sauce, 1/4 cup brown sugar, 1 tablespoon sesame oil, 4 garlic cloves (minced), 1 tablespoon ginger (grated), 1/4 cup rice wine, 1 cup beef broth, 2 tablespoons gochujang (Korean red pepper paste), 1 onion (sliced), 2 carrots (cut into chunks), 3 green onions (chopped), 1 tablespoon cornstarch, 2 tablespoons water, sesame seeds (for garnish). Instructions: place beef short ribs in the slow cooker. in a bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice wine, beef broth, and gochujang until combined. pour this mixture over the beef. add sliced onion and carrot chunks on top. cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender and falling off the bone. once cooked, remove beef and vegetables to a plate. skim fat from the liquid in the slow cooker. in a small bowl, mix cornstarch and water to make a slurry, then stir it into the liquid. turn the slow cooker to high and cook for 10-15 minutes until the sauce thickens. return beef and vegetables to the pot, coating them in the sauce. sprinkle with chopped green onions and sesame seeds before serving. serve with rice or noodles.
