Protein-Packed Steak and Sweet Potato Power Meal Recipe
Ingredients: - 1 medium-sized sweet potato, peeled and cubed - 1 tablespoon olive oil - Salt and pepper to taste - 2 boneless, skinless chicken breasts or steak (about 6 oz each) - 1 teaspoon garlic powder - 1 teaspoon paprika - 1 tablespoon olive oil - 1 cup spinach, fresh or frozen - ½ cup quinoa, cooked - 1 tablespoon lemon juice Instructions: 1. Preheat the oven to 400°F (200°C). 2. Toss sweet potato cubes in olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender, turning halfway. 3. While sweet potatoes are roasting, season chicken breasts or steak with garlic powder, paprika, salt, and pepper. 4. Heat olive oil in a skillet over medium heat.
