I'm showing you how easily you can make
0:02
delicious double chocolate chip cookies
0:04
with melted chocolate and crushed candy
0:06
canes on top. They're made gluten-free
0:08
with oat and almond flour and are chewy
0:10
on the inside and crispy on the outside.
0:12
We're going to begin by adding our
0:14
ingredients to a mediumsized mixing
0:15
bowl. We're going to start with half a
0:16
cup of coconut sugar, 5 tablespoon of
0:19
softened butter, and 2 tbsp of maple
0:22
syrup. And then we'll cream these
0:23
together until well combined.
0:26
Next, we'll add our wet ingredients,
0:27
which includes one egg, 1 teaspoon of
0:29
vanilla extract, and 1 teaspoon of apple
0:32
cider vinegar. And then we'll mix these
0:33
just until the egg is incorporated.
0:37
Now, we can add our dry ingredients,
0:39
which includes 1 and 1/2 cups of almond
0:41
flour, 3/4 a cup of oat flour, and I
0:44
find that this combination of flour is
0:46
really delicious and just gives a really
0:47
great texture to the cookie without
0:49
being too grainy. Four a cup of cocoa
0:52
powder. And then I have 1 teaspoon of
0:54
tapioca flour, or you could use
0:55
cornstarch, half a teaspoon of cinnamon,
0:58
half a teaspoon of baking soda, and 1/4
1:00
a teaspoon of salt. And then we'll mix
1:02
these together until well combined.
1:05
And now we have a very delicious and
1:07
chocolatey smelling cookie dough. For
1:09
adding your chocolate chips, you have
1:10
two options. You can either dump them
1:12
right into the dough and mix them in, or
1:14
you can put some into your scoop and
1:15
then put the batter on top as you scoop
1:17
your cookies, which makes sure that
1:19
those chocolate chips are on top of the
1:21
cookie when it bakes. All you do is take
1:23
about a teaspoon of chocolate chips,
1:24
drop them right into your scoop. And
1:26
then go in and fill it with cookie
1:28
dough. And then place it right on top of
1:30
your cookie sheet. And then all your
1:32
chocolate chips are right on top. And
1:34
then it makes it really easy to press
1:35
your cookie down to shape it into a nice
1:37
round circle. Well, these look
1:39
fantastic. and they are ready to go into
1:41
a 350°ree oven for 10 minutes. While our
1:44
cookies are in the oven, we can go ahead
1:46
and prep our chocolate and our
1:47
peppermint pieces that are going to go
1:49
on top of our cookies. We're going to
1:50
add half a cup of chocolate chips to a
1:52
microwave safe bowl and half a teaspoon
1:54
of coconut oil. Then we're going to
1:56
microwave this in 30-second intervals,
1:58
stirring it in between until it's smooth
2:00
and creamy. So, after two rounds of 30
2:02
seconds, our chocolate is smooth and
2:04
melted. So, I'm just going to give it a
2:05
quick stir. Oo, that's perfect. Now, for
2:07
the peppermint candy, you can use any
2:09
variety that you like, and there's some
2:11
really great organic options out there.
2:13
You could use candy canes, or you could
2:15
use round peppermint candies, or you
2:17
could buy some pre-crushed candy. I have
2:19
about a four cup of crushed candy here
2:20
in my bowl. After the cookies baked for
2:22
10 minutes, I took them out of the oven
2:24
and then allowed them to cool on my
2:26
counter, and they look fantastic.
2:28
They're chunky and chocolatey and just
2:30
have a really nice smooth round finish
2:32
to them. And then I'm just putting my
2:33
rack on top of this cookie sheet, which
2:35
will be able to catch any stray pieces
2:37
of candy. Now you just take a cookie in
2:39
your hand. Scoop some chocolate. Drizzle
2:43
it right in the center.
2:45
Spread it around with your spatula. And
2:48
I like to spread it within oh about 38
2:50
of an inch of the edge of the cookie.
2:52
And then we take some of our peppermint
2:54
candy and then sprinkle it on top. And
2:56
it will stick to the chocolate. Then
2:58
I'll just turn it back upside down on
3:00
top of my bowl just to get any pieces
3:02
that didn't land on chocolate. Now you
3:04
will want to wait until your chocolate
3:05
sets before you eat these. So if you're
3:07
in a cool climate, you can just leave it
3:08
out on your counter until the chocolate
3:10
sets or you can put them into your
3:11
fridge or you can speed it up by putting
3:13
them into your freezer. I tend to be a
3:15
little bit on the impatient side, so I
3:17
went ahead and put one in the freezer
3:18
just to speed up the setting of the
3:20
chocolate. And it looks so good. And
3:22
it's always fun to break it open first
3:24
and hear the snap of the chocolate.
3:29
M
3:30
crunchy. That is so yummy. That is just
3:34
a flavor explosion of chocolate and
3:36
peppermint. The cookie is chewy on the
3:38
inside but then a little bit crispy on
3:39
the outside. And then getting the little
3:41
bit of crunch coming in from the
3:42
chocolate chips inside the cookie is so
3:45
good. And then getting the chocolate on
3:47
top with the peppermint candies mixed in
3:49
just gives a little bit of crunch and
3:51
some texture and then brings in a little
3:53
bit more of that intense sweet flavor
3:54
from the candy. I love that it's all
3:56
perfectly balanced by not being too
3:58
sweet. And it's made with nutrient-dense
4:00
ingredients, which means I'm going to
4:01
feel just as good after I eat it. Well,
4:03
thank you so much for hanging out with
4:04
