So, you got some new cast iron and you

don't know what to do with it next. I've

this process. First thing I need you to

do, run your hand all the way around

through here on the bottom. Do you feel

like this? This is factory smooth, so it

ought to be in pretty good shape. But

what we need to do first is wash it with

good hot water and soap. And I know

residue if there's any on here off.

So, wipe any of that excess water out

with a good lint-free rag. Then, let's

bring it over to some heat. High heat is

to see just a little whiff of smoke.

Then, I turn it off. Grape seed oil is

what I prefer. And so many people use

too much. It doesn't take much. Sure,

this is a big old skillet, but this is a

lint-free rag. Wiper around there. You

can see that smoke now even better. We

won't leave, we don't want to leave any

excess in there. That's when it begins

sticky cast iron. My favorite oils,

Slide a sheet pan under that top rack.

Go ahead and take your skillet, turn it

upside down. Now, what we're doing here

is creating a great way to get that base

hour, 450°, then turn that oven off, let
