First, preheat your oven to 350°F (175°C). In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1 teaspoon of ground ginger. In a separate bowl, whisk together 1 cup of brown sugar, 1/2 cup of molasses, 1/2 cup of vegetable oil, 1 egg, and 1/2 cup of boiling water.
Pour the wet ingredients into the dry ingredients and mix until just combined. Transfer the batter to a greased 9x5-inch loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
