Introduction:
These Black Bean Tacos are a delicious, plant-based meal that’s packed with flavor and protein. Quick and easy to prepare, they’re perfect for a weeknight dinner or a casual gathering with friends.
Ingredients:
1 can (15 oz) black beans, rinsed and drained
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
8 small corn or flour tortillas
Toppings (optional): diced tomatoes, avocado, cilantro, lime wedges, shredded lettuce, cheese, sour cream
Instructions:
Sauté Aromatics: In a medium skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute.
Add Beans and Spices: Add the black beans to the skillet along with cumin, chili powder, salt, and pepper. Cook, stirring gently, until heated through and well combined, about 5-7 minutes.
