Today we're going to make a really cool historic cocktail. Actually, we're not. We're just going to start this historic cocktail

This is something called Cherry Bounce and I'm going to let Sandra talk about it a little bit

because I think it's a really amazing thing. Well, this drink goes back, we know it has roots into the 17th century at least

It was very popular, and the idea was that you could take cherries at the peak of season and be able to preserve them and enjoy them later in the year

This was often used as a celebratory cocktail, particularly for Christmas. And so it really couldn't be easier

We're going to do two versions today. Right, and we should say it's June. It's June

That's important to know. Right. So you're going to want to let this sit a little while before you enjoy it

As in six months. or longer? At least. It can last longer too, huh? Yeah, and you could let it go for a couple of

months, but really to get a nice smooth product, I would say let it go six months. Plan ahead

do it when cherries are in season, and just plan to wait. Okay. So all I'm going to do is take this

bit, and you see each one of these containers is about halfway full of cherries, maybe a little bit

less and just use the container. I'm not going to give you measures here because the amount of

cherries that you have is the amount that you should use. So just find a container that will

you could fill about halfway with your cherries and then halfway with alcohol. And then fill it up

once again with. And we're using bourbon, right? And traditionally it's bourbon, but do some people

use brandy? Is that right? Brandy actually is probably the original because they would have been

using things from Europe. Right, of course, and so bourbon didn't exist

until the new world developed a little more. Right, so yeah, brandy probably would have been

you can get locally or distill in your backyard, right? Make some use it. It's cheaper. It's

readily available, right? Right. And actually there was a cataclysm in the French vineyard

world that happened in the 19th century that made all of these things become completely unavailable it's a choice but to go to other kinds of things which is great

your choice it can be as good I wouldn't use terrible terrible bourbon because

is a lot of bourbon. This is a lot of bourbon. Which is why we just got a really big bottle

of bourbon. I don't think I've ever poured that much bourbon in one go, ever. It feels

right and this is the way I make it um it's the way I've always made it I love it I do let it go

for at least six months and I usually make a couple batches so I'll have two or three jars

like this when I make when cherries are good I don't usually drink more than one right in the

winter and so I have it to last through the next year or then usually the next holiday I have one

that's a year old so I was sort of thinking I would gift one yes I have a friend who's really

into bourbons and I thought he would really love a gift of this so it would be kind of cool just tie a big bow on it and get it off Absolutely so easy but there another way to do this so some there are old recipes too that include some sugar and some spices I personally don think you need

them I as I've said tend to shy away from sweeter beverages other people really like a little sweeter

taste so we're going to do a version with some sugar and some spice and I think this is so

going to be your gift batch. Yeah. Um, so this is a quarter cup of sugar and I'm just going to

dump it right in there. To me, that's sugar. Um, but, and then we've got some spices

We have, we're going to just drop in a whole cinnamon stick. Stick. And I think that would

be important. Two cloves. Yep. And Charleston's cut off a little piece about a sliver of nutmeg

from a whole nutmeg. I do recommend don't try and use ground spices here

You want to go ahead and use the whole stuff. Otherwise, they're just, after it sits in alcohol

I think nutmegs are so beautiful. They're beautiful and fresh nutmeg. There's no comparison

It'll turn this beautiful ruby color. It doesn't the plain does not get sweet

I think we should also point out really quickly too we washed these cherries first and we just pulled the stems off They still the pit still in there So these are just clean cherries no stem and that it That it Nice

This is the unspiced. I also made a spiced version, but that I'm going to give to a friend of mine for Christmas

You can put the cherry in it or you cannot. You can serve this neat in another glass
