if you've seen any of my recipes before
0:02
then you will know that I love a one pop
0:05
meal and this one pop Mexican style bean
0:08
stew is absolutely fabulous it's an
0:11
incredible one for meal prepping so make
0:13
a big vat of it at the start of the week
0:16
and then just heat up portions when
0:18
you're ready to eat for lunches it's so
0:20
so good start with oil in a big dish and
0:24
add a chopped onion and three cloes of
0:28
garlic let those cook for a little bit
0:30
and then you're going to add half a
0:32
teaspoon of ground cinnamon half a
0:35
ground teaspoon of ground coriander and
0:39
half a teaspoon of ground
0:41
cumin you'll also want a tablespoon of
0:44
smoked paprika and this is going to give
0:47
it this really intense Smokey taste
0:49
which is just incredible now you're
0:52
going to add about 50 mil of red wine
0:55
and let that just bubble down if you
0:58
don't want to use wine in this that's
0:59
fine fine you could use a bit of
1:01
vegetable stock or even just
1:04
water once you've let that reduce down
1:06
you're going to start adding your beans
1:08
this is a tin of black beans and a tin
1:11
of blackeyed beans plus a tin of chopped
1:15
tomatoes you're also going to add two
1:18
diced yellow peppers you could use any
1:20
color of peppers um but I like to use
1:22
yellow for that pop of color and you
1:25
will also want to add 150 g of quinoa
1:29
this is my secret ingredient and it
1:31
makes it really filling um and it just
1:33
goes so far when you add quinoa at this
1:36
point just check the liquid level it
1:39
should look like this if yours is
1:41
thicker then just add a little bit of
1:42
water let it cook for about 15 minutes
1:45
until the quino is cooked then you can
1:48
add about 30 G of chopped coriander stir
1:53
that in obviously leave that off if you
1:55
are a coriander hater and then you're
1:58
ready to serve with a good dollop of
2:01
soured cream and a sprinkling of grated
2:05
cheese and you have the most incredible
2:07
complete Meal which is full of good
2:11
things it's ready in about 30 minutes
2:13
and tastes amazing with tortilla chips
2:16
dipped in it delicious
