if you're looking for an easy and
0:03
delicious week night dinner then these
0:06
easy cheesy vegetable enchiladas made
0:08
with five different vegetables are for
0:11
you they are so easy to make and so
0:13
delicious let me show you how okay start
0:16
with a little bit of oil and a sliced
0:18
red onion let it Sizzle just a little
0:21
bit and then add two corett chopped like
0:24
this then 200 g of butter mushrooms just
0:27
cut in half and a yellow PE pepper cut
0:30
into thin slices of course you can use
0:32
any color pepper that you like and
0:35
actually you can be really creative with
0:37
the vegetables that you use here as well
0:39
now you're just going to cook these
0:40
vegetables down for about 5 minutes or
0:43
so until they start to soften and
0:44
release all the liquid then add two
0:46
heaped teaspoons of smoked paprika a
0:49
teaspoon of cinnamon and half a teaspoon
0:53
of Gran cumin plus half a teaspoon of
0:56
garlic powder give that a little stir
0:59
and then FYI if you buy those fajita
1:01
kits this is all that's in them so get
1:03
some pots of spices and you can save
1:05
your money now add 2 tablespoons of
1:08
tomato puree give it a stir and when it
1:11
looks like this you can start to stuff
1:13
your tortilla wraps just share the
1:15
mixture evenly out between your wraps
1:17
and then fold them as you would a fajita
1:19
or a burrito and pop them in an
1:22
ovenproof dish you'll need a large
1:24
ovenproof dish and it might be a bit of
1:26
a squeeze but that's okay now just top
1:29
them with a tin of chopped tomatoes I
1:31
like to use a good quality tin of
1:33
chopped tomatoes here then season with
1:35
salt and pepper and top with cheddar and
1:38
mozzarella that is key pop in the oven
1:40
for 20 minutes at 180° and it'll look
1:44
like this perfect
