Just outside of Priago de Cordoba, a Spanish town well known for its olive groves
0:11
locals Francisco Garcia and Joanna Romero are letting me see firsthand how olive oil is made
0:18
And it's a process that makes me appreciate those easy-to-open bottles of the green stuff
0:25
The first step is harvesting the olives, which can be quite a workout
0:29
Whether you do it the traditional way of literally beating the trees, or use some sort of machinery
0:36
both of which are done in Priago de Cordoba. Since these olives are going to make olive oil
0:41
and not end up in someone's martini, they aren't hand-picked, which would be done to avoid bruising
0:48
After they've fallen into the net, they're gathered up and taken to the mill
0:53
This is where the leaves and branches are separated from the olives
0:56
and the olives are pressed to make olive oil. I head inside for my first olive oil tasting
1:04
After experiencing the hard work that goes into this olive oil I excited to learn how to taste it Well let try it Let get the left cup The palm of the hand we going to warm the glass
1:16
so that we can extract the smell and the taste. We'll smell it
1:23
Here we've seen a fruit more intense fruit. More frangente. More fragrance
1:29
Very fragrant. The plants that grow in the countryside. We try it
1:33
We try it. The water is a sweetness, it has a little of a
1:39
bit of leaves, and at the end a bit of bitterness. It's very good when you describe all the different tastes that I should be tasting
1:49
I can, you know, makes it more real and I can taste all the different flavors
1:53
not just the olives and the oil, but all these other different things that go into it
1:58
And I didn't know that olive oil was so much like wine
2:02
No, I know that the oil of olive is like the wine. Exactly, it's like a wine
2:07
There's a lot of oils, many types of and, well, here you have one of the the best
2:11
It's true. There's some variety of olive oils, but this is only one of them
2:18
Thank you
