Basic Vanilla Cupcakes
Ingredients:
250 grams unsalted butter (softened)
250 grams caster sugar
250 grams self-raising flour
4 medium eggs
4 tablespoons milk
A pinch of salt (optional)
Instructions:
Preheat your oven to 180°C (350°F) and line a cupcake tray with paper cases.
Cream the butter and sugar together until light and fluffy.
Beat in the eggs one at a time, adding a little flour with each egg to prevent the mixture from curdling.
Fold in the remaining flour and salt, then add the milk and mix until smooth.
Divide the mixture evenly among the cupcake cases.
Bake for 20-25 minutes or until a skewer inserted into the center comes out clean.
Allow the cupcakes to cool on a wire rack before decorating as desired.
