Here’s a simple and delicious recipe for making cottage cheese at home:
Homemade Cottage Cheese
Ingredients:
1 gallon of skim milk
3/4 cup white vinegar
1 1/2 teaspoons salt
1/2 cup heavy cream (optional, for creamier texture)
Instructions:
Heat the Milk: Pour the skim milk into a large saucepan and heat it over medium heat until it reaches 120°F (49°C).
Add Vinegar: Remove the milk from heat and slowly add the vinegar while stirring gently. The milk will start to curdle.
Let it Sit: Cover the saucepan and let it sit at room temperature for about 30 minutes.
Strain the Curds: Pour the mixture into a colander lined with cheesecloth to separate the curds from the whey. Let it drain for about 5 minutes.
Rinse and Salt: Rinse the curds under cold water to cool them down and remove any remaining whey. Transfer the curds to a bowl and mix in the salt.
Add Cream (Optional): For a creamier texture, you can stir in the heavy cream.
