Here’s a simple and delicious recipe for a Chickpea and Tuna Salad:
Ingredients:
1 can of chickpeas, drained and rinsed
1 can of tuna, drained
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, finely chopped
1/4 cup feta cheese, crumbled (optional)
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Chickpeas and Tuna: In a large bowl, combine the drained chickpeas and tuna.
Add Vegetables: Add the cherry tomatoes, cucumber, and red onion to the bowl.
Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Combine: Pour the dressing over the chickpea and tuna mixture. Toss everything together until well combined.
Optional Add-ins: If using, sprinkle the feta cheese over the salad and mix gently.
Garnish and Serve: Garnish with fresh parsley and serve immediately.
