Here’s a classic peanut brittle recipe that’s both delicious and easy to make:
Peanut Brittle
Ingredients:
1 ½ teaspoons baking soda
1 teaspoon water
1 teaspoon vanilla extract
1 ½ cups granulated sugar
1 cup water
1 cup light corn syrup
3 tablespoons butter
1 pound shelled unroasted peanuts
Instructions:
Prepare the Baking Soda Mixture: In a small bowl, combine the baking soda, 1 teaspoon of water, and vanilla extract. Set aside.
Cook the Sugar Mixture: In a large saucepan, combine the granulated sugar, 1 cup of water, and light corn syrup. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture comes to a boil.
Add the Peanuts: Stir in the peanuts and continue to cook, stirring frequently, until the mixture reaches 300°F on a candy thermometer (hard crack stage). This will take about 10-15 minutes.
Add the Butter and Baking Soda Mixture: Remove the saucepan from the heat and immediately stir in the butter and the baking soda mixture. The mixture will foam up.
Pour and Spread: Quickly pour the mixture onto a greased baking sheet and spread it out evenly with a spatula.
Cool and Break: Allow the brittle to cool completely, then break it into pieces.
