Ingredients:
For the Crust:
1 cup unsalted butter (melted)
2 cups all-purpose flour
½ cup granulated sugar
¼ teaspoon salt
For the Filling:
1 ½ cups granulated sugar
¼ cup all-purpose flour
4 large eggs
2/3 cup freshly squeezed lemon juice (about 3-4 lemons)
1 tablespoon lemon zest (optional)
Powdered sugar (for dusting)
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Crust: In a medium bowl, mix together the melted butter, flour, sugar, and salt until well combined. Press the mixture evenly into the prepared baking pan. Bake for 20 minutes or until the edges are lightly golden.
Prepare the Filling: While the crust is baking, whisk together the sugar and flour in a large bowl. Add the eggs, lemon juice, and lemon zest, and whisk until smooth and well combined.
Bake: Pour the filling over the hot crust and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center.
