Here’s a classic cheese fondue recipe that’s perfect for a cozy gathering:
Ingredients:
1 garlic clove, halved
1 cup dry white wine (such as Sauvignon Blanc)
1 tablespoon fresh lemon juice
1 pound Gruyère cheese, grated
½ pound Emmentaler cheese, grated
1 tablespoon cornstarch
1 ½ tablespoons kirsch (cherry brandy)
Freshly ground black pepper
Freshly grated nutmeg
Instructions:
Prepare the Pot: Rub the inside of a cheese fondue pot or medium enameled cast-iron casserole with the garlic clove; discard the garlic.
Heat the Wine: Add the wine and lemon juice to the pot and bring to a gentle simmer over medium heat.
Add Cheese: In a bowl, toss the grated cheeses with the cornstarch. Gradually add the cheese to the simmering wine, stirring constantly until melted and smooth.
Add Flavorings: Stir in the kirsch, a generous pinch of black pepper, and a dash of nutmeg. Continue to cook, stirring gently, until creamy and smooth.
Serve: Serve immediately with dippers like cubed bread, boiled baby potatoes, lightly steamed vegetables, apple slices, and more.
