Healthy Egg Casserole (Egg Bake)
Ingredients:
6 ounces bacon (diced, about 5 slices)
1 cup onion (finely chopped)
1 teaspoon garlic (minced)
1 red bell pepper (diced, about 1 cup)
1 green bell pepper (diced, about 1 cup)
12 eggs (beaten)
½ teaspoon sea salt
¼ teaspoon pepper
1 cup cheddar cheese (shredded, 4 oz)
Instructions:
Preheat oven to 375°F (190°C).
Cook bacon in a large skillet over medium heat until crispy. Remove and set aside.
Sauté onion and garlic in the same skillet until softened.
Add bell peppers and cook for another 2-3 minutes.
In a large bowl, whisk together eggs, salt, and pepper.
Stir in the cooked bacon, sautéed vegetables, and cheese.
Pour the mixture into a greased 9x13-inch baking dish.
Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
