Delicata squash recipe

Ingredients:
2 medium Delicata squash (about 1 1/2 pounds total)
2 tablespoons olive oil
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Instructions:
Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Squash: Wash the squash thoroughly. Cut off the ends, then slice the squash in half lengthwise. Scoop out the seeds and slice the squash into 1/2-inch thick half-moons.
Season the Squash: In a large bowl, toss the squash slices with olive oil, salt, and pepper until evenly coated.
Roast: Spread the squash slices in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, turning halfway through, until the squash is tender and golden brown.
This roasted Delicata squash is perfect as a side dish or even as a snack. You can also add some extra flavor by sprinkling Parmesan cheese or fresh herbs like thyme or rosemary before roasting12.
