Instructions:
Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Make the Dough: In a medium saucepan, combine the butter, water, and salt. Bring to a boil over medium heat. Add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
Cool and Add Eggs: Remove from heat and let cool for 5 minutes. Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy.
Pipe the Dough: Transfer the dough to a piping bag fitted with a large round tip. Pipe small mounds (about 1 1/2 inches in diameter) onto the prepared baking sheet, spacing them about 2 inches apart.
Bake: Bake for 15 minutes, then reduce the oven temperature to 375°F (190°C) and bake for an additional 20 minutes, or until the puffs are golden brown and sound hollow when tapped. Cool completely on a wire rack.
Make the Filling: In a large bowl, whip the heavy cream, granulated sugar, and vanilla extract until stiff peaks form.
Fill the Puffs: Once the puffs are cool, cut them in half horizontally. Fill the bottom halves with the whipped cream and replace the tops.
Dust with Powdered Sugar: Dust the filled cream puffs with powdered sugar before serving12.
