Healthy Cauliflower Rice
Ingredients:
1 large head of cauliflower (separated into 1-inch florets)
3 tablespoons olive oil
1 medium onion (finely diced)
Kosher salt (to taste)
2 tablespoons fresh parsley leaves (finely chopped)
Juice of ½ lemon
Instructions:
Prepare the Cauliflower:
Wash and thoroughly dry the cauliflower.
Cut it into florets and pulse in a food processor until it resembles rice. Alternatively, you can use a box grater.
Cook the Cauliflower Rice:
Heat olive oil in a large skillet over medium heat.
Add the diced onion and cook until softened, about 5 minutes.
Add the cauliflower rice and cook, stirring occasionally, until the cauliflower is tender, about 5-8 minutes.
Season with kosher salt to taste.
Finish and Serve:
Remove from heat and stir in the chopped parsley and lemon juice.
Serve warm as a side dish or use it as a base for other recipes.
