Chicken Salad Roll-Ups
Ingredients:
2 cans (12.5 oz each) canned chicken, drained
1 medium avocado, peeled and pitted
3 tablespoons plain yogurt
1 ½ teaspoons lime juice
½ teaspoon garlic powder
Salt, to taste
½ medium red onion, chopped
1 red bell pepper, chopped
2 tablespoons green onion, minced
¾ cup shredded cheese (Swiss or cheddar)
1 tablespoon parsley, chopped
6 flour tortillas (8-inch size)
Instructions:
Prepare the Filling: In a large bowl, mash the avocado. Add the plain yogurt, lime juice, garlic powder, and salt. Mix until smooth.
Combine Ingredients: Add the drained canned chicken, red onion, red bell pepper, green onion, shredded cheese, and parsley to the avocado mixture. Stir until well combined.
Assemble Roll-Ups: Lay out the flour tortillas and evenly spread the chicken mixture over each one. Roll up the tortillas tightly.
Serve: Cut the roll-ups into slices and serve immediately, or refrigerate until ready to eat.
