Ingredients:
1 cup creamy peanut butter
5 tablespoons unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
2 tablespoons coconut oil (optional)
Instructions:
Mix the peanut butter and softened butter together until smooth.
Gradually add the powdered sugar and vanilla extract, mixing until well combined and a dough forms.
Roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Insert a toothpick into each ball.
Freeze the balls for about 30 minutes to firm them up.
Melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl, stirring every 30 seconds until smooth.
Dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter visible at the top.
Place the dipped balls back on the parchment paper and refrigerate until the chocolate is set.
